late-night cooking spree

glass_icarusFirst one in a while, which is probably a good thing? On the other hand, random impulse baking means I ended up with a pretty great modified version of these easy peanut butter oatmeal cookies.
Mods:
- used slightly less than 1/2 c sugar (certainly not packed), because
- added probably around 1/2 c dried cranberries
- melted a few chunks of unsweetened chocolate & mixed it in with the peanut butter
- added a few shakes of cayenne pepper
DELICIOUS. Also, I could've maybe done this vegan by leaving the egg out altogether- the peanut butter and melted chocolate combo seemed thick enough to hold pretty well.
